You will find on the table the extra virgin olive oil and balsamic Vinegar "Caldera" using strictly national ingredients. Grana Padano cheese on pasta and risotto has 18 months of seasoning.



Preferably we use local ingredients as the wine Amarone for sauces, the Monte Veronese cheese in its three main seasonings, Truffles of Lessinia, dry horse meet, mushrooms of our mountains and rice superfine aged "Vialone nano" of Boschirotto.

We started using all those ingredients like wheat pasta "Senatore Cappelli" or Spelt pasta with a very low gluten content that able people with food allergies to have a normal meal at the restaurant. In our kitchen we do not use chemical flavor enhancers or margarine or colorings.

Dear Guest, you can also ask to our stuff on duty for information on substances and ingredients that can provoke allergies or intollerances.
